This is the fifth year we have made this wonderful hot sauce. It was the sauce that started it all for us.

We wait for our friend in Lalor to call us to tell us her fruit has dropped. We go and collect it from her. This year we got 40kg of feijoas. When we get back to the workshop we blend it with fermented jalapenos and the previous years feijoa vinegar that we produce from the feijoa skins.

This batch uses fermented red jalapenos instead of green. It is floral, fruity and rich.

Enjoy with meat, vegetables or even ice cream.
